Homemade Granola

Most store-bought granola is just expensive candy pretending to be healthy. This version lets you control everything - sweetness, clusters, what goes in it. The secret to clusters is pressing it down hard before baking. No pressing means loose oats.

Ingredients

  • 2 1/4 cups rolled oats
  • 3/4 cup raw nuts pecans, walnuts, almonds, or mixed
  • 6 tablespoons pepitas
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon sea salt
  • 6 tablespoons avocado oil
  • 6 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup dried fruit raisins, craisins, apricots, currants

Instructions

  • Preheat oven to 350F.
  • Mix oats, nuts, pepitas, cinnamon and salt in medium bowl.
  • Add oil, honey and vanilla; stir until evenly coated.
  • Spread mixture on parchment-lined baking sheet, pressing firmly into even layer.
  • Bake 10 minutes, stir gently, then bake additional 10 minutes until golden.
  • Let cool completely on pan without stirring, 30-45 minutes.
  • Add dried fruit and break into clusters.
  • Store in airtight container up to 2 weeks.

Notes

Pressing the mixture firmly before baking and allowing to cool undisturbed creates better clusters.
