Apple Oatmeal Cookies

These are not pretty cookies, but they're full of texture from chewy oats, crunchy walnuts, and soft pockets of apple that caramelize at the edges. Every bite is a little different, and that's what makes them so good.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon Diamond Crystal Kosher Salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup 1 stick unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1 large Gala apple cored and finely diced (no need to peel)
  • 1 cup chopped walnuts toasted

Instructions

  • Whisk the flour, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  • Beat the softened butter and brown sugar with a hand mixer until light and fluffy, about 3 minutes.
  • Beat in the egg and vanilla extract until combined, scraping the bowl as needed.
  • Mix in the dry ingredients on low speed until just combined.
  • Fold in the oats, diced apple, and toasted walnuts with a spatula.
  • Cover and chill the dough for 30 minutes.
  • Preheat the oven to 375F and line a baking sheet with parchment paper.
  • Drop rounded tablespoons of the chilled dough 2 inches apart on the prepared baking sheet.
  • Bake for 12-15 minutes until the edges are golden brown and centers are set.
  • Let the cookies cool on the baking sheet for 5 minutes.
  • Transfer the cookies to a wire rack to cool completely.

Notes

 The cookies will be fragile when first out of the oven.
