Almond Cherry Oatmeal

This is not the gluey, bland oatmeal you're used to. Using steel-cut oats gives it a chewy texture, and the cherries break down into jammy pockets. The almond extract makes the whole kitchen smell incredible.

Ingredients

  • 3 cups water
  • 1 cup whole milk
  • 1 cup steel-cut oats
  • 1 cup frozen dark sweet cherries
  • 1/4 teaspoon Diamond Crystal Kosher Salt
  • 1/4 cup packed dark brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Toasted sliced almonds for topping

Instructions

  • Bring the water and milk to a boil in a medium saucepan.
  • Add the steel-cut oats and the salt, reduce the heat to low and simmer for 20-25 minutes, stirring occasionally until tender.
  • Add the frozen cherries, the dark brown sugar, and the cinnamon.
  • Cook for 5 minutes more, stirring frequently until the cherries thaw and release their juices.
  • Remove from the heat and stir in the vanilla and almond extracts.
  • Serve immediately in bowls topped with the toasted sliced almonds.

Notes

 The oatmeal will thicken significantly as it cools.
