Agua de Limon con Chia

This is basically limeade with chia seeds that get all gelatinous when they soak. The texture throws some people off at first - like tiny tapioca pearls floating around. But once you get past that, it's one of the most refreshing drinks you can make on a hot day.

Ingredients

  • 7 limes plus extra for garnish
  • 5 cups filtered water room temperature
  • 6 tbsp honey
  • 3 tablespoons chia seeds
  • Ice cubes

Instructions

  • Juice 7 limes, straining out pulp and seeds to get 1/2 cup juice.
  • Mix lime juice, water, and honey in a pitcher. Stir until honey dissolves completely.
  • Gradually sprinkle chia seeds into liquid, stirring constantly to prevent clumping.
  • Let mixture sit for 30 minutes, stirring every 10 minutes until seeds gel and expand.
  • Serve over ice, garnish with lime wedge. Stir before pouring to distribute seeds.
