- 1 large Gala apple, cored and finely diced (no need to peel)

Make the Cookie Dough
In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In a large bowl, use a hand mixer to beat the softened butter and brown sugar together until the mixture is light and fluffy, about 3 minutes.
Beat in the egg and vanilla extract until fully combined, scraping down the sides of the bowl as needed.
Add the dry ingredients to the butter mixture and mix on low speed until just combined.
With a spatula, stir in the rolled oats, diced apple, and toasted walnuts. The dough will be thick and chunky.
Chill the Dough
Cover the bowl and refrigerate the dough for at least 30 minutes. This step is important; it helps the oats absorb moisture and keeps the cookies from spreading too much in the oven.
While the dough chills, preheat your oven to 375F and line a baking sheet with parchment paper.
Bake the Cookies
Drop rounded tablespoons of the chilled dough onto the prepared baking sheet, about 2 inches apart.
Bake for 12-15 minutes, until the edges are golden brown and the centers look set.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. They will be fragile right out of the oven.
