Ingredients
- 3 cups water
- 1 cup whole milk
- 1 cup steel-cut oats
- 1 cup frozen dark sweet cherries
- 1/4 teaspoon Diamond Crystal Kosher Salt
- 1/4 cup packed dark brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Toasted sliced almonds, for topping
Cook the Oats
In a medium saucepan, bring the water and milk to a boil.
Stir in the steel-cut oats and the salt. Reduce the heat to low and let it simmer, stirring occasionally.
Cook for ~20-25 minutes, until the oats are tender and have absorbed most of the liquid.
Add the Flavor
Stir in the frozen cherries, dark brown sugar, and cinnamon.
Continue to cook for another ~5 minutes, stirring more frequently, until the cherries have thawed and released some of their juices. The oatmeal should be thick and creamy.
Finish and Serve
Pull the pot off the heat. Stir in the vanilla and almond extracts.
Ladle the oatmeal into bowls immediately. Top with a generous amount of toasted sliced almonds for crunch.
This is best eaten right away. Steel-cut oats hold their texture better than rolled oats, but it will still thicken up considerably as it cools.

Almond Cherry Oatmeal

- Add the steel-cut oats and the salt, reduce the heat to low and simmer for 20-25 minutes, stirring occasionally until tender.
- Add the frozen cherries, the dark brown sugar, and the cinnamon.
- Cook for 5 minutes more, stirring frequently until the cherries thaw and release their juices.
- Remove from the heat and stir in the vanilla and almond extracts.
- Serve immediately in bowls topped with the toasted sliced almonds.
