Ingredients
- 5-6 limes, juiced (about 2/3 cup)
- 8 cups room temperature water
- 1/3 cup sugar
- 2 Tbsp chia seeds
Make the Limeade Base
In a large pitcher, combine the lime juice, water, and sugar.
Stir until the sugar is fully dissolved. You shouldn’t see any granules at the bottom.
Add and Hydrate the Chia Seeds
Slowly pour the chia seeds into the pitcher while you stir the liquid.
This keeps the seeds from clumping together at the bottom.
Let the pitcher sit for at least 30 minutes.
This step is essential for the texture; you’ll see the seeds absorb liquid and become soft and gelatinous.
Give it a final stir and serve over ice.

Agua de Limon con Chia
This is a super refreshing limeade with chia seeds that get gelatinous, like tiny tapioca pearls. The texture can be weird if you’re not expecting it, but it’s one of the best things to drink on a hot day. The key is to add the chia seeds correctly so they don’t form gross clumps.
