Mango Lassi Recipe

Ingredients

  • 1 1/2 cups frozen mango chunks
  • 1 cup plain whole-milk yogurt
  • 1/2 cup whole milk
  • 2 tablespoons honey
  • 1/4 teaspoon ground cardamom
  • 1 teaspoon fresh lime juice
  • A pinch of Diamond Crystal kosher salt
  • 1 tablespoon chopped pistachios, for garnish (optional)

Blend Until Completely Smooth

Combine the frozen mango chunks, whole-milk yogurt, whole milk, honey, ground cardamom, lime juice, and salt in a blender.

Blend on high speed for ~60-90 seconds. You need to blend until the mixture is completely smooth and creamy, with no small chunks of mango remaining. Scrape down the sides of the blender with a spatula if needed.

Taste and Adjust

Once blended, give the lassi a taste. If it’s too thick to drink easily, add another splash of milk and blend for a few seconds to thin it out. If you prefer it sweeter, you can add a little more honey.

Serve Immediately and Ice-Cold

Pour the lassi into glasses immediately after blending. This drink is meant to be served ice-cold; its cooling properties are lost if it’s allowed to sit and warm up.

If you like, garnish the top with a sprinkle of chopped pistachios for a bit of texture.

Mango Lassi

A lassi is a yogurt-based drink designed to cool the palate, making it the perfect thing to serve with spicy food. The key is to get the balance right between the sweet mango and the tangy yogurt. Using frozen mango chunks is the best way to achieve a thick, slushy texture and an ice-cold temperature without watering it down with actual ice.
