- 4 medium leeks
- 3 Tbsp olive oil
- 1/2 tsp kosher salt
- 1/2 tsp coarsely ground black pepper
- 3/4 cup shredded Gruyere cheese
Prep and Clean the Leeks
Set your oven to 400F.
Leeks hold a lot of grit between their layers, so they need a good wash. First, trim off the root ends and the dark green tops, leaving you with the white and light green parts.
Slice each leek in half lengthwise. Run them under cold water, fanning the layers with your fingers to rinse out any trapped dirt. Pat them dry with paper towels.
Roast the Leeks
Place the cleaned leeks in a baking dish. Drizzle them with olive oil and season with salt and pepper, tossing to coat everything evenly.
Arrange the leeks cut-side down in a single layer.
Roast them for ~20 minutes. You’ll notice they start to soften and the edges will begin to caramelize.
Pull the dish out of the oven and flip the leeks so they are cut-side up. Sprinkle the shredded Gruyere over the top.
Return the dish to the oven and bake for another 7-10 minutes, or until the cheese is melted, bubbly, and browned in spots. The leeks should be tender enough to be easily pierced with a fork.

Instructions

- Cut leeks lengthwise, rinse thoroughly under cold water, pat dry.
- Place in baking dish, drizzle with oil, season with salt and pepper.
- Arrange cut-side down, roast 20 minutes.
- Flip cut-side up, top with Gruyere.
- Bake 7-10 minutes until cheese browns and leeks are tender.
